Heart-Healthy Chopped Salad Recipe

Chopped SaladThere is a kind of chopped salad I get at an Italian place I like to go to here in Tennessee. After eating it a few times, I wondered if I could make it at home. It’s a fairly simple recipe that I’ve made a couple modifications to - and I think you’ll enjoy it.

You need:
3 cups romaine or spinach (I prefer romaine), torn into small pieces
1/2 medium tomato, chopped
1/4 chopped onion (or 2-3 chopped green onions)
1/2 avocado, cut into bite-size pieces
1-2 oz reduced fat feta cheese, crumbled
Dressing ingredients:
2 T vinegar
1 T extra virgin olive oil
A squeeze of lemon juice
Small amounts of sea salt and pepper

Toss the salad ingredients in a large salad bowl. In a seperate bowl, whisk together lemon juice, olive oil, vinegar, salt and pepper. Pour over and enjoy!
