Burning The Scale

Week One: Progress

After only one week of my Burning the Scale challenge I am already down five pounds. How did I do it you ask? First let me come to your house and lick all your forks. In about 24 hours, you should have the answer. I’m kidding, I wouldn’t wish the stomach flu on my worst enemy. After a week of either not eating or eating a meal solely comprised of saltines and Gatorade, I have a new found respect for my body. It’s not worth loosing the weight if it’s not done in a healthy way.

So I was obviously not able to stick to my fitness pledges, although prior to my illness hubby and I did take a brisk 30 minute walk. This week however, I am committed to making it work. I am glad to be able to eat real food now but I just can’t tolerate the sight of anything fatty or rich just yet. I thought I would share my recipe for baked chicken that I intend to make tonight.

You will need the following:

  • Boneless, skinless chicken breasts
  • One lemon
  • Fresh herbs ( I like dill)
  • Whole wheat couscous
  • Red and green pepper

I just slice the lemon in one inch slices and then cover each chicken breast with two lemon slices and the fresh herbs. Then wrap the chicken individually in aluminum foil so that it makes a little sealed pouch. Bake at 375 for about 20 minutes or until juices run clear. While the chicken is baking make the couscous, the portion size should be one cup per person. Cut the peppers into thin strips and saute in a pan with two tablespoons Extra Virgin Olive Oil until softened. Mix it into the couscous when you are done. Sorry, I’m no Barefoot Contessa. It’s a pretty basic meal but I think it tastes pretty good and really satisfies your hunger. Now combine meals like that with some actual physical activity, not counting walking to the kitchen, and I think I am on my way. Tell me about some of your favorite healthy recipes.
